Hi everyone... the blog begins

What better way to kick off than with my favourite fruit cake recipe. This is very low in fat and utterly delicious.

Fruit tea loaf

Makes 1 2lb loaf. This is a very quick and easy recipe – and contain very little fat. You can use whatever fruit you like. I like a mixture of sultanas, raisins and currents with a few glace cherries.


8oz self raising flour (white or wholemeal)
6oz sugar (granulated or demerara) - or 4oz of light cane sugar
8fl oz strong cold tea (earl grey is nice)
8oz of dried fruit of your choice
Zest of one lemon
1 large egg
1tsp of mixed spice, cinnamon or ground cardamom (if you can find it)
a little milk to mix if needed

Line a 2lb loaf tin with greaseproof paper. This cake contains no fat so it will stick otherwise.

Pre-heat the oven to 180 deg C/gas mark 4/350 deg F.

Place the dried fruit, lemon zest and spice in a basin and pour on the cold tea. Leave the soak for at least an hour. Then stir in the flour, sugar and beaten egg. If the mixture appears too thick add a little milk.

Spoon the mixture into the tin and bake on the middle shelf for an hour. Leave to cool in the tin for a few minutes before turning out. Cool and keep in a tin until needed. You could serve this sliced and buttered but I think it is nicer as it is.
